Preriscalda il forno a 190°C. Rivesti una teglia con carta da forno.

In una ciotola pulita, monta gli albumi a neve fermissima con una frusta elettrica (circa 5 minuti) finché non diventano bianchi, lucidi e impossibili da rovesciare.

In un'altra ciotola, mescola il burro chiarificato, la farina integrale, il latte scremato, i tuorli, la grappa e l'estratto di vaniglia fino a ottenere un impasto omogeneo e cremoso.

Con movimenti delicati, incorpora un terzo degli albumi montati all'impasto, poi aggiungi il resto piegando dal basso verso l'alto con una spatola.

Trasferisci il composto in una tasca da pasticcere con bocchetta grande (o un imbuto riutilizzabile).

Spruzza leggermente la teglia preparata con olio di cocco.

Forma spirali sul cartone iniziando dall'esterno verso il centro, lasciando 2 cm di distanza tra una e l'altra.

Cuoci in forno per 18-22 minuti fino a quando gli strauben non diventano dorati e croccanti ai bordi.

Estrai dal forno e lascia raffreddare per 5 minuti sulla teglia, poi trasferisci su un piatto.

Spolverizza leggermente con zucchero di canna e servi con un cucchiaio di marmellata di frutti di bosco senza zucchero.
