Tostare le mandorle intere in forno a 190°C per 6-7 minuti, finché non profumano intensamente; lasciarle raffreddare completamente, poi tritarle grossolanamente in un robot da cucina (il 40% deve restare in pezzi visibili).

In una ciotola capiente, mescolare la farina integrale, le proteine in polvere, il sale e il pepe nero.

Sciogliere il lievito in acqua tiepida con il miele, lasciare riposare 2 minuti.

Versare il liquido sulla farina e mescolare energicamente; aggiungere l'olio evo e le mandorle tritate, impastare fino a ottenere un composto omogeneo e non appiccicaticcio (circa 3 minuti).

Avvolgere l'impasto in pellicola trasparente e riposare in frigorifero per 20 minuti.

Dividere l'impasto in 12 porzioni uguali (circa 30 g ciascuna), formare filoncini di 18 cm, unire le estremità e intrecciare leggermente su se stesso (2-3 giri).

Adagiare i taralli su una placca rivestita di carta forno, coprire con pellicola e lasciare lievitare 45 minuti in luogo tiepido.

Preriscaldare il forno a 190°C.

Rimuovere la pellicola, spennellare leggermente con acqua e cospargere di semi di sesamo (se graditi).

Cuocere per 22-25 minuti fino a doratura croccante; la base deve suonare vuota al tocco.
