Tagliare il salmone surgelato in piccoli cubetti di circa 1 cm, lavorando direttamente dal congelatore per mantenere integrità e freschezza; trasferire in una ciotola.

Pelure l'avocado, eliminare il nocciolo, tagliarlo in cubetti di 1 cm e aggiungerlo subito al salmone insieme al succo di limone per evitare l'ossidazione.

Mondare il cetriolo, tagliarlo finemente in brunoise (cubetti piccoli) e aggiungerlo al salmone.

Tritare finemente lo scalogno e aggiungerlo al composto.

Lavare e asciugare prezzemolo e aneto, tritarli al coltello e unirli.

Condire con olio extravergine, sale marino e pepe nero, amalgamando delicatamente con un cucchiaio di legno per non schiacciare gli ingredienti.

Lasciar riposare in frigorifero per 10 minuti prima di servire per far amalgamare i sapori.
