Preriscalda il forno a 180°C. Rivesti uno stampo da torta apribile (20 cm di diametro) con carta forno.

In una ciotola, unisci le uova con l'eritritolo e sbatti per 2-3 minuti fino a ottenere un composto chiaro e spumoso.

Aggiungi lo yogurt greco, l'olio di cocco fuso e la scorza grattugiata di lime, mescolando delicatamente.

In un'altra ciotola, mescola la farina d'avena, le proteine in polvere, i semi di cardamomo (pestati leggermente) e il lievito.

Incorpora gli ingredienti secchi al composto bagnato con movimenti dolci, fino a ottenere un impasto omogeneo.

Versa l'impasto nello stampo e liscia la superficie.

Cuoci in forno per 24-26 minuti: lo stecchino infilato al centro deve uscire pulito.

Estrai la torta dal forno e lasciala intiepidire nello stampo per 5 minuti.

Prepara lo sciroppo: in una piccola pentola, riscalda a fuoco dolce il succo di lime con il miele, mescolando fino a una consistenza omogenea (2 minuti).

Bucherella la superficie della torta con uno stuzzicadenti e versa lentamente lo sciroppo.

Lascia raffreddare completamente a temperatura ambiente, quindi sforma su un piatto.

Servi a fette, preferibilmente dopo 2-3 ore dal raffreddamento.
