Preriscaldare il forno a 180°C e rivestire una tortiera da 24 cm con carta da forno.

In una ciotola, montare albumi e uova con zucchero di canna fino a ottenere un composto spumoso (circa 8-10 minuti a velocità media con le fruste).

Aggiungere delicatamente la scorza d'arancia grattugiata e il burro fuso, incorporando con movimenti ampi dal basso verso l'alto.

In un'altra ciotola, mescolare la farina integrale, farina d'avena, lievito, cacao in polvere e sale.

Unire i secchi agli albumi in tre passate, mescolando delicatamente con una spatola per non smontare il composto.

Versare l'impasto nella tortiera e cuocere per 35 minuti a 180°C, finché uno stuzzicadenti inserito esce pulito.
