Polverizzare 6,5g di mandorle pelate con 3g di eritritolo (imita lo zucchero della base).

Aggiungere 23g di farina di mandorle, 2g di olio EVO, 10ml di acqua fredda, 1 pizzico di lievito e sale; impastare e avvolgere in film plastico per 15 minuti in frigorifero.

Nel frattempo, tritare 70g di mela, aggiungere un pizzico di cannella, 3ml di succo di limone e 0,5g di maizena; mescolare.

Stendere 2/3 dell'impasto in una mini tortiera (12x10cm) e distribuire il composto di mela; cuocere 20 minuti a 180°C.

Montare 30ml di acquafaba con 5g di eritritolo e 1 goccia di aceto; versare sulla torta. Tritare il rimanente 1/3 di impasto con 1,5g di eritritolo per il crumble; cospargere e cuocere altri 15 minuti a 180°C. Raffreddare prima di servire.
