Method

Cuoci il riso integrale in 100ml di acqua per circa 20 minuti, finché non è tenero, quindi scolalo e lascialo raffreddare.

In un mixer, unisci i fagioli azuki cotti, il latte di mandorla e l'eritritolo, frullando fino a ottenere una crema liscia.

In una ciotola, mescola la farina d'avena, il cacao in polvere, il lievito e un pizzico di sale.

Aggiungi lo yogurt greco e il riso cotto al mix di farina, mescolando bene.

In uno stampo da 150ml, stendi metà del composto, aggiungi la crema di fagioli azuki e copri con il resto dell'impasto.

Cospargi con le noci tritate e cuoci in forno preriscaldato a 180°C per 30 minuti, fino a doratura. Lascia raffreddare prima di servire.
