Preriscalda il forno a 180°C e rivesti una tortiera da 24 cm di carta forno.

In una ciotola pulita, monta gli albumi con le fruste elettriche per 5-6 minuti fino a ottenere picchi fermi e lucidi. Trasferiscili in frigorifero.

In un'altra ciotola, cremosa il burro chiarificato con lo zucchero di canna fino a ottenere un composto chiaro e spumoso (circa 2 minuti).

Aggiungi i tuorli uno alla volta, mescolando bene dopo ciascuno.

Incorpora la ricotta magra e amalgama delicatamente.

Setaccia insieme farina integrale, amido di patata, proteine in polvere, sale e lievito. Aggiungi il composto secco a quello burrato e mescola fino a incorporare tutto.
