Method

Montare leggermente gli albumi con una forchetta fino a renderli spumosi. In una ciotola mescolare latte, panna, farina integrale, tuorlo, lievito, curry e sale fino a ottenere una pastella liscia.

Incorporare delicatamente gli albumi montati alla pastella con movimenti dal basso verso l'alto.

Lasciare riposare la pastella per 10 minuti a temperatura ambiente.

Nel frattempo, preparare il tortino: frullare finemente il Parmigiano, il prezzemolo e i pomodorini tritati. Aggiungere le uova intere, la panna light, sale, pepe e noce moscata. Mescolare bene e versare il composto in due piccoli stampini.

Cuocere a vapore gli stampini per 18-20 minuti a 100°C.

In una padella antiaderente leggermente unta d'olio, cuocere i blinis versando un cucchiaio di pastella per ogni fritella. Cuocere 2-3 minuti per lato fino a doratura.

Condire i gamberi con olio, sale e pepe. Avvolgere ciascun gambero con una foglia di porro ammorbidita.

Tagliare le patate novelle a dadini e cuocerle a vapore insieme ai gamberi avvolti nel porro per 12-15 minuti.

Assemblare il piatto: posizionare il tortino al centro, affiancare i blinis e i gamberi al porro con le patate.
