Method

Versare la farina integrale in una ciotola, aggiungere le proteine in polvere, il sale e mescolare bene per evitare grumi.

In un'altra ciotola, sbattere l'uovo con la scorza d'arancia grattugiata, la cannella, l'olio extravergine e il vino rosso.

Unire gli ingredienti secchi a quelli bagnati e impastare fino a ottenere un composto omogeneo. Aggiungere il bicarbonato e mescolare delicatamente.

Trasferire l'impasto su un piano di lavoro lievemente infarinato e lavorarlo per 2-3 minuti fino a renderlo compatto e elastico.

Suddividere l'impasto in porzioni da circa 30 g e modellare cilindri lunghi 15-18 cm.

Tagliare ogni cilindro in pezzi di circa 2 cm. Passare i pezzetti sui rebbi di una forchetta per creare le righe caratteristiche.

Disporre i turdilli su una teglia rivestita di carta forno, spruzzare leggermente con olio spray e infornare a 190°C per 20-22 minuti fino a doratura croccante.

Nel frattempo, scaldare a bagnomaria il miele con l'acqua (non far bollire, solo riscaldare a circa 60°C).

Sfornare i turdilli e lasciarli intiepidire per 2 minuti sulla teglia, quindi trasferirli su un piatto da portata.

Glassare delicatamente i turdilli con il miele caldo usando un cucchiaio o una spazzola da cucina.

Servire dopo almeno 30 minuti di riposo, quando la glassa sarà semifredda e leggermente croccante.
