Inizia tritando finemente il cipollotto e facendolo rosolare in una pentola con l'olio extravergine d'oliva per circa 2 minuti a fuoco medio.

Aggiungi il cavolfiore già pulito e diviso in cimette, coprilo con acqua e aggiungi un pizzico di sale. Cuoci per circa 12 minuti, finché il cavolfiore non risulta tenero.

Scola il cavolfiore e il cipollotto, trasferiscili in un mixer. Aggiungi lo yogurt greco, la noce moscata e il pepe. Frulla fino ad ottenere una crema liscia e vellutata.

Lascia raffreddare la vellutata in frigorifero per almeno 30 minuti prima di servire.
