Method

Preriscalda il forno a 180°C e copri una placca con carta forno.

In una ciotola mescola la farina integrale, il cacao amaro e il lievito; metti da parte.

In un'altra ciotola, aggiungi il cioccolato fondente tritato al burro light tiepido (riscaldalo a bagnomaria se necessario) e mescola fino a scioglimento.

Incorpora lo zucchero di canna, le uova e la vaniglia; mescola energicamente fino a ottenere un composto omogeneo e liscio.

Versa il misto di farina nel composto di uova e cioccolato, mescolando delicatamente fino a non vedere tracce di farina.

Distribuisci cucchiaiate da 30 g di impasto sulla placca, distanziandole di 2-3 cm l'una dall'altra (ne usciranno circa 24 dischetti).

Cuoci in forno per 10 minuti, finché la superficie non è leggermente screpolata ma l'interno rimane morbido al tatto.

Estrai la placca e lascia raffreddare completamente i biscotti su una griglia.

Per la crema: frulla insieme la ricotta magra, lo yogurt greco, le proteine in polvere, il miele e l'olio di lino fino a raggiungere una consistenza cremosa e senza grumi.

Trasferisci la crema in una tasca da pasticceria con bocchetta tonda.

Capovolgi metà dei biscotti e farcisci il lato piatto con circa 1 cucchiaio abbondante di crema.

Chiudi con un altro biscotto, premendo dolcemente. Riponi in frigorifero per almeno 30 minuti prima di servire.
