Sciacqua bene i fagioli e le lenticchie e mettili da parte. Pela e taglia le carote, la cipolla e il sedano in pezzi regolari.

Scalda l'olio in una pentola a fuoco medio-alto, aggiungi il soffritto (carote, cipolla, sedano) e rosola per 3-4 minuti fino a doratura leggera, mescolando frequentemente.
