In una ciotola, unisci la farina di mandorle, la farina di avena, l'uovo, il burro di cocco fuso, l'eritritolo e l'estratto di vaniglia, mescolando fino a ottenere un impasto omogeneo.

Stendi l'impasto tra due fogli di carta forno fino a ottenere uno spessore di circa 4mm e ritaglia 2 biscotti tondi (5cm di diametro) con un bicchiere.
