Method

Reidratare il baccalà salato in acqua fredda per 4 ore, cambiando l'acqua 2-3 volte, quindi sciacquare e tagliare a pezzi.

In una piccola pentola o casseruola monoporzione, creare il primo strato: 80g di cavolfiore grattugiato come base al posto delle patate.

Aggiungere il baccalà (100g), cipolla affettata sottile (50g), mezzo uovo sodo, 3-4 capperi, aglio tritato fine, 8-10 olive verdi, 20g di peperoni arrostiti, 1 cucchiaio di uvetta.

Versare metà della salsa di pomodoro (30g) e 1 cucchiaino di olio EVO. Ripetere gli strati saltando l'uovo.

Aggiungere 80ml di acqua e 30ml di vino bianco, portare a ebollizione a fuoco medio, quindi ridurre a fuoco basso.

Coprire e cuocere 12-15 minuti fino a quando il cavolfiore risulta tenero, senza mescolare.
