Ammollare il baccalà in acqua fredda per 12 ore, cambiando l'acqua 3-4 volte, quindi sciacquare e rimuovere la pelle.

Cuocere il baccalà in acqua per 8 minuti, quindi far raffreddare leggermente, desossare e tagliare a pezzi.

In una padella antiaderente, rosolare per 2 minuti la cipolla affettata finemente e l'aglio con l'olio EVO.

Aggiungere il baccalà nella padella e cuocere per 2 minuti.

In una ciotola, mescolare lo yogurt greco con il latte di mandorla tiepido, una presa di noce moscata, sale e pepe.

Versare la crema di yogurt sui baccalà e amalgamare delicatamente.

Cuocere a vapore il cavolfiore per 3 minuti, poi tritarlo finemente e unirlo al composto di baccalà.

Trasferire in una pirofila, cospargere di parmigiano grattugiato e gratinare in forno a 200°C per 10 minuti fino a doratura.
