Preriscaldare il forno a 175°C. Foderare una placca con carta forno.

In una ciotola, mescolare farina d'avena, proteine in polvere, farina di mandorla, cacao amaro, lievito e sale.

In un'altra ciotola, sbattere le uova con l'olio di cocco fuso, aggiungere zucchero di canna e vaniglia.

Unire gli ingredienti secchi agli ingredienti bagnati, mescolare fino a ottenere un impasto omogeneo e leggermente denso.

Spalmare circa 1 cucchiaio di farcia su metà dei biscotti raffreddati, quindi chiuderli con le altre metà.
