Preriscalda il forno a 200°C. Metti la melanzana intera su una teglia e cuocila per circa 20 minuti, girandola a metà cottura, fino a quando la pelle è carbonizzata.

Una volta cotta, trasferisci la melanzana in un piatto, lasciala raffreddare per alcuni minuti, quindi rimuovi la pelle e tagliala a cubetti.

In una padella, scalda l'olio extravergine d'oliva a fuoco medio e aggiungi la cipolla. Fai rosolare per circa 4 minuti fino a quando diventa traslucida.
