Sbucciare le barbabietole e tagliarle in cubetti di circa 2 cm di lato; risciacquarle per eliminare residui di terra.

Spremere il limone e filtrare il succo; tagliare anche la buccia (se biologica) in sottili strisce.

Versare l'acqua e il succo di limone in una pentola, portare a circa 85°C (acqua non bollente ma fumante).

Inserire le barbabietole in un sacchetto per sottovuoto, aggiungere le strisce di scorza di limone e il sale; sigillare sottovuoto.

Immergere il sacchetto in acqua calda (85°C) per 3 ore, mantenendo la temperatura costante (idealmente con un termometro da cucina o un roner da 75-85°C se disponibile).

Estrarre il sacchetto con cura, aprirlo e lasciar raffreddare le barbabietole a temperatura ambiente.

In una piccola ciotola, montare la riccotta con un cucchiaio, unite l'olio d'oliva, il pepe e l'erba cipollina.
