Method

Toastare leggermente le mandorle intere in una padella a fuoco medio per 3-4 minuti, mescolando frequentemente; lasciarle raffreddare leggermente e tritarle grossolanamente con un coltello.

In una ciotola, mescolare la farina integrale, le proteine in polvere, il lievito, il peperoncino, il cacao, la vaniglia e il sale.

In un'altra ciotola, sbattere leggermente l'uovo e aggiungere il burro chiarificato fuso (tiepido) e lo zucchero, amalgamando bene.

Versare il composto liquido nel mix secco, aggiungere il latte e impastare con una spatola fino a ottenere un impasto omogeneo e compatto. Aggiungere le mandorle tritate e mescolare delicatamente.

Trasferire l'impasto su un foglio di carta forno e modellarlo a forma di cilindro (diametro circa 3,5 cm, lunghezza 12 cm). Avvolgere in pellicola trasparente e riporre in frigorifero per 2 ore.

Preriscaldare il forno a 180°C. Foderare una placca con carta forno.

Estrarre il cilindro dal frigorifero, togliere la pellicola e tagliare biscotti di 0,8 cm di spessore con un coltello pulito e umido. Disporre i biscotti sulla placca, distanziandoli leggermente.

Cuocere per 12-14 minuti fino a quando i bordi risultano dorati e la superficie leggermente croccante.

Lasciar raffreddare completamente su una gratella prima di servire. Conservare in un contenitore ermetico per 4-5 giorni.
