Preriscaldare il forno a 190°C e rivestire una teglia con carta forno.

In una ciotola capiente, sbattere il burro chiarificato con l'eritritolo fino a ottenere un composto cremoso e leggero (circa 2 minuti).

Aggiungere l'uovo e l'estratto di vaniglia, continuare a montare per 1 minuto fino a incorporare aria.

In un'altra ciotola, mescolare il riso soffiato precedentemente ridotto in scaglie, la polvere proteica, le mandorle tritate, il lievito e un pizzico di sale.

Versare gli ingredienti secchi nel composto burro-uovo e mescolare delicatamente con una spatola aggiungendo l'estratto di fior di loto, fino a ottenere un impasto omogeneo.

Riporre l'impasto in frigorifero per 20 minuti.

Con un cucchiaio da dessert, distribuire piccole porzioni sulla teglia preparata, distanziate di 3 cm l'una dall'altra.

Cuocere in forno per 11-13 minuti, finché i biscotti non acquisiscono un colore dorato ai bordi ma rimangono morbidi al centro.
