Method

Preriscaldare il forno a 180°C e rivestire una placca con carta forno.

Tritare finemente le mandorle in un robot da cucina (o con un coltello) fino a ottenere una granella media.

In un pentolino a fuoco basso, scaldare il miele con la stevia per 2-3 minuti fino a intiepidire leggermente.

Aggiungere le mandorle tritate al miele e mescolare bene con un cucchiaio di legno.

In una ciotola, setacciare insieme la farina integrale, le proteine in polvere, la cannella, i chiodi di garofano tritati e la noce moscata.

Versare il composto miele-mandorle nella ciotola con gli ingredienti secchi.

Aggiungere la scorza di limone, l'uva sultanina, il licor di mandorla e l'olio di cocco; mescolare fino a ottenere un impasto omogeneo.

Trasferire l'impasto sulla placca preparata e stenderlo con le mani umide fino a uno spessore di 1 cm, compattando bene.

Cuocere in forno a 180°C per 18-20 minuti, finché non inizia a dorare ai bordi.

Sfornare e lasciare raffreddare per 5 minuti sulla placca, quindi trasferire su una griglia.
