Preriscalda il forno a 160°C e foderauna teglia con carta forno.

Grattugia le mele pulite, cospargile subito con succo di limone per evitare ossidazione, e lascia riposare in un colino per 5 minuti in modo che rilascino l'eccesso di umidità.

Tritafinemente le noci con un coltello o in un mixer fino a ottenere una granella uniforme.

In una ciotola capiente, mescola lo yogurt greco, il protein powder, il miele e l'olio di cocco fino a ottenere una crema omogenea.

Aggiungi la farina d'avena, le noci tritate, la cannella, la vaniglia, il lievito e il sale: mescola delicatamente fino a incorporare tutti gli ingredienti.
