Preriscaldare il forno a 200°C. Disporre le fette di pane su una teglia, irrorare leggermente con 15 ml di olio, infornare per 8-10 minuti fino a doratura, poi togliere e lasciar raffreddare.

Pulire i funghi con un panno umido, tagliarli a fettine sottili. Dividere i broccoli in piccoli cimette e lessarli in acqua salata per 4 minuti, scolarli bene.

Ricavare il succo e la scorza del limone. Mettere gli anacardi, il prezzemolo, la scorza, il succo, 20 ml di olio, la senape e la paprika in un mixer (o mortaio) e frullare fino a ottenere una crema liscia. Aggiustare di sale e pepe.

In una padella a fuoco medio-alto, scaldare i restanti 25 ml di olio, aggiungere l'aglio schiacciato e far insaporire per 1 minuto. Aggiungere i funghi, aumentare il fuoco e cuocere per 4-5 minuti mescolando spesso, finché la loro acqua di vegetazione non si è evaporata. Salare, pepare.

Aggiungere i broccoli ai funghi, mescolare delicatamente e cuocere ancora 1 minuto. Togliere dal fuoco e aggiustare i condimenti.

Spalmare una cucchiaiata di crema di anacardi su ogni bruschetta tostata. Ricoprire con un mucchietto di verdure trifolate e servire subito, ancora tiepide.
