Preriscalda il forno a 190°C e prepara uno stampo rettangolare 20x15 cm rivestito con carta forno.

Monta gli albumi con l'eritritolo fino a ottenere picchi morbidi; in un'altra ciotola, sbatti il tuorlo con l'estratto di vaniglia e poi incorpora delicatamente il composto di albumi.

Setaccia il mix secco (cacao amaro, farina di cocco e sale) sopra il composto e amalgama con movimenti lenti.

Versa l'impasto nello stampo e cuoci per 8-10 minuti fino a doratura leggera.
