Preriscalda il forno a 180°C e rivesti uno stampo rettangolare di 20x15 cm con carta forno unta.

In una ciotola, monta gli albumi con 15g di eritritolo fino a ottenere picchi morbidi.

A parte, sbatti il tuorlo con l'estratto di vaniglia, quindi incorpora delicatamente il composto agli albumi.

Setaccia il mix secco (15g di cacao amaro + 10g di farina di cocco + un pizzico di sale) negli albumi e mescola con movimenti lenti.

Versa l'impasto nello stampo e cuoci per 8-10 minuti fino a doratura leggera sui bordi.

Sforna e lascia raffreddare per due minuti, poi capovolgi su un foglio di carta forno spolverato con 5g di eritritolo.

Arrotola delicatamente il dolce e lascialo raffreddare completamente.

Per il ripieno, monta 60g di yogurt greco con 20g di crema di formaggio light, 5g di cacao e il caffè espresso.

Spalma il ripieno sul rotolo freddo e arrotola nuovamente.
