Preriscalda il forno a 180°C. Rivesti uno stampo rettangolare (20x15 cm) con carta forno.

Monta gli albumi con l'eritritolo fino a ottenere picchi morbidi. In una ciotola a parte, sbatti il tuorlo con l'estratto di vaniglia.

Incorpora delicatamente il composto di tuorlo agli albumi montati.

Setaccia insieme il cacao, la farina di cocco e il sale, quindi aggiungili al composto di uova amalgamando lentamente.
