Method

Scaldare leggermente il latte scremato (circa 37°C), aggiungervi il lievito di birra e mescolare fino a dissolverlo completamente. Lasciar riposare 5 minuti.

In una ciotola grande, versare la farina integrale e la farina proteica, quindi aggiungere il sale e mescolare gli ingredienti secchi.

Creare una fontana al centro, versarvi il composto di latte e lievito, quindi aggiungere l'olio extravergine.

Iniziare a impastare con le mani, incorporando gradualmente la farina dai bordi verso il centro fino a formare un impasto omogeneo e elastico (circa 8-10 minuti).

In una piccola ciotola, sbattere leggermente il tuorlo con il latte scremato. Spennellare delicatamente la superficie di ogni panino.

Cospargere con semi di sesamo e un pizzico di erbe aromatiche. Coprire con un panno e lasciare lievitare ancora 45-60 minuti.

Preriscaldare il forno a 200°C. Infornare i panini per 18-20 minuti fino a doratura dorata uniforme.

Trasferire su una gratella e far raffreddare completamente prima di tagliare e farcire.
