Preriscalda il forno a 220°C. Rivesti una teglia con carta da forno.

Pulisci le capesante: sciacquale sotto acqua fredda, asciugale con carta assorbente e separa il disco di muscolo bianco dal guscio. Tienile da parte.

Affetta sottilmente l'echalion e rosola in padella con 1 cucchiaio di olio a fuoco medio per 3 minuti.

Sfuma con il vino bianco e lascia evaporare per 2 minuti.

Spegni il fuoco e aggiungi la ricotta magra, il succo di limone, sale, pepe e paprika. Mescola fino a ottenere un composto cremoso e omogeneo. Fai raffreddare leggermente.

Posiziona i gusci sulla teglia (puoi stabilizzarli con un cucchiaino sotto se necessario).

Distribuisci 1 capasanta in ogni guscio, poi copri con il composto di ricotta (circa 1 cucchiaio per guscio).

In una ciotola mescola il pangrattato integrale, il Parmigiano grattugiato, le erbe aromatiche tritate finemente e il rimanente olio (1 cucchiaio).

Cospargi la miscela croccante sopra ogni capasanta.

Inforna a 220°C per 12-14 minuti fino a quando la crosta è dorata e le capesante sono opache e ben cotte.

Estrai dal forno con attenzione e servi immediatamente.
