Sbucciare le carote novelle e lasciarle intere o tagliarle a bastoncini di 8-10 cm, mantenendo la croccantezza naturale. Sciacquarle sotto acqua fredda.

Sterilizzare tre vasetti di vetro da 300 ml: immergerli in acqua bollente per 5 minuti, asciugarli bene.

Disporre negli vasetti: 1-2 spicchi di aglio, alcune strisce di cipolla rossa, fettine di peperoncino fresco, un rametto di aneto, 1 foglia di alloro per vasetto.

Sistemare i bastoncini di carota in piedi nei vasetti, riempiendo fino a 2 cm dal bordo.

In un pentolino inossidabile, versare l'acqua, l'aceto di mele e il miele. Portare a 90°C (non deve bollire impetuosamente). Aggiungere i semi di senape, il pepe nero e il sale marino. Lasciare sul fuoco per 3-4 minuti mescolando delicatamente.

Versare la salamoia calda (a circa 80°C) nei vasetti fino a coprire completamente le carote. Distribuire i semi di senape residui.

Chiudere i vasetti subito con i coperchi, lasciar raffreddare a temperatura ambiente per 30 minuti.

Riporre in frigorifero per almeno 24 ore prima di consumare. La marinatura migliora nel tempo: al picco di sapore tra 3-5 giorni.

Una volta aperto, conservare in frigo e consumare entro 2 settimane.
