Riscalda la vaporiera o una pentola con cestello vapore riempiendo il fondo con acqua fino a 2 cm d'altezza. Porta a ebollizione.

Nel frattempo, in un padellino a fuoco medio, soffrigi cipolla finemente affettata e aglio schiacciato in 5 ml d'olio extravergine per 2-3 minuti finché non diventano traslucidi.

Aggiungi i pomodori pelati, le olive nere tagliate a metà e i capperi ben risciacquati. Cuoci per 5 minuti a fuoco medio, poi spegni e aggiungi il basilico fresco strappato con le mani.

Asciuga i filetti di cernia con carta da cucina. Strofinali leggermente con 5 ml d'olio, sale e pepe su entrambi i lati.

Disponi i filetti nel cestello vapore (puoi usare carta da forno forata per facilitare il trasferimento) e cuoci al vapore per 12-15 minuti fino a quando la carne è opaca e si sfalda facilmente con una forchetta.
