Pelare le cipolle rosse, tagliarle a fette sottili e farle rosolare in una pentola antiaderente con l'olio extravergine a fuoco medio per 5 minuti, mescolando spesso, finché non diventano trasparenti.

Aggiungere l'aceto di mele, lo zucchero integrale, il sale, la cannella e i chiodi di garofano; mescolare bene e cuocere a fuoco medio-basso per 10 minuti.

Incorporare le more fresche intere, lo zenzero grattugiato finemente, e proseguire la cottura per altri 10-12 minuti a fuoco basso, mescolando delicatamente ogni 2 minuti finché la consistenza non si addensa leggermente (il chutney continuerà a compattarsi durante il raffreddamento).

Spegnere il fuoco e lasciare riposare il chutney per 5 minuti; se desideri una consistenza più densa, schiaccia leggermente le more con il dorso di un cucchiaio di legno.

Versare in vasetti sterilizzati (da 50 ml ciascuno), chiudere bene e far raffreddare completamente a temperatura ambiente.

Conservare in frigorifero per almeno 4 ore (o preferibilmente una notte) prima di servire; si mantiene fino a 3 settimane in frigorifero.
