In una ciotola mescola la ricotta magra con il miele acacia fino a renderla cremosa e omogenea.

Aggiungi gli albumi d'uovo uno alla volta, incorporandoli delicatamente con una frusta.

Grattugia la scorza di limone fresco e uniscila al composto insieme a una pizzico di vaniglia in polvere.

In un'altra ciotola, setaccia insieme la farina integrale, la farina di mandorle e il lievito per dolci.

Incorpora gli ingredienti secchi al composto di ricotta con movimenti dal basso verso l'alto, fino a ottenere un impasto omogeneo.
