Method

Scaldare il forno a 200°C. Lavare le cipolle, pelare con cura e affettarle in rondelle di circa 5 mm di spessore, mantenendo le strati uniti.

Distribuire le cipolle su una teglia rivestita di carta forno, cospargere con 1 g di sale e 2 g di aceto balsamico. Cuocere in forno per 15 minuti, mescolando a metà cottura, fino a che iniziano a caramellare leggermente.

Nel frattempo, in un pentolino versare 150 ml di acqua, 80 ml di aceto balsamico, 15 g di zucchero, 7 g di sale rimanente, semi di senape, pepe in grani, alloro e miele. Portare a ebollizione a fuoco medio per 3 minuti.

Aggiungere le cipolle cotte al liquido bollente, mescolare delicatamente e cuocere per altri 8 minuti a fuoco moderato, fin quando le cipolle assorbono i sapori.

Trasferire le cipolle e il liquido in vasetti di vetro sterilizzati, riempiendo fino all'orlo. Chiudere i coperchi e lasciare raffreddare a temperatura ambiente per almeno 2 ore.

Una volta fredde, conservare in frigorifero fino a 20 giorni. Servire tiepide o fredde, eventualmente con un cucchiaio di ricotta proteica per aumentare le proteine.
