Method

Lavare accuratamente le fragole sotto acqua fredda, asciugarle bene e rimuovere il picciolo.

Tagliare le fragole a metà, trasferirle in una pentola a fondo pesante e aggiungere il succo di limone.

Riscaldare a fuoco medio-alto e portare a ebollizione, mescolando di tanto in tanto per circa 10 minuti: le fragole inizieranno a rilasciare i loro succhi naturali.

Abbassare il fuoco a medio, aggiungere il nettare d'agave e l'agar agar precedentemente sciolto in 30 ml di acqua fredda.

Mescolare bene e cuocere per altri 8-10 minuti, finché il liquido si sia ridotto e la composta abbia consistenza densa e pastosa.

Spegnere il fuoco, attendere 2 minuti, quindi aggiungere le proteine in polvere mentre mescoli energicamente per evitare grumi: incorporarle gradualmente fino a completa omogenizzazione.

Aggiungere una punta di sale marino per esaltare il sapore.

Versare la composta ancora calda in 4-5 vasetti di vetro sterilizzati (da circa 180-200 ml ciascuno), sigillare immediatamente e capovolgere per 10 minuti per garantire la conservazione sottovuoto.

Capovolgere nuovamente i vasetti nella posizione corretta e far raffreddare completamente a temperatura ambiente prima di conservare in frigorifero.
