Method

Sciacquare le lenticchie rosse sotto acqua fredda e metterle da parte.

In una pentola capiente, far soffrire l'aglio e la cipolla in olio extravergine per 2 minuti a fuoco medio, finché non diventano trasparenti.

Aggiungere carote e sedano, rosolare per altri 2 minuti, mescolando di tanto in tanto.

Versare le lenticchie nel soffritto, coprire con il brodo vegetale e aggiungere la curcuma.

Portare a ebollizione, abbassare il fuoco e cuocere a fuoco medio-basso per 25-28 minuti, finché le lenticchie non sono completamente morbide.

Nel frattempo, tagliare il pane integrale a cubetti regolari di 1 cm, disporli su una teglia e tostare in forno preriscaldato a 180°C per 6-8 minuti, finché diventano croccanti.

Frullare la crema di lenticchie con un frullatore a immersione fino a raggiungere una consistenza cremosa e vellutata (o usare un frullatore tradizionale).

Aggiustare di sale e pepe.

Suddividere la crema in 4 ciotole, cospargere con i crostini tostati, aggiungere qualche striscia di speck e il prezzemolo fresco. Servire ben calda.
