Preparare la pasta frolla: in una ciotola, mescolare la farina d'avena, le proteine in polvere, il sale e la scorza di limone.

Aggiungere il burro d'arachidi e l'uovo, impastare con le mani fino a ottenere un composto omogeneo e compatto. Avvolgere in pellicola e riposare in frigorifero per 45 minuti.

Preriscaldare il forno a 180°C (modalità statica).

Stendere l'impasto tra due fogli di carta forno fino a uno spessore di 5-6 mm e rivestire uno stampo per crostata da 24 cm, pareggiare i bordi.

Foderare il fondo con carta forno e riso crudo, cuocere al buio per 12 minuti. Togliere il riso e la carta, continuare per altri 3 minuti.

Mentre la base riposa, preparare il ripieno: frullare la ricotta, le proteine in polvere, il latte di mandorla, l'uovo, il miele, la vaniglia e il sale fino a ottenere una crema liscia e omogenea.

Sbucciare le pere, tagliarle a fette sottili, disporle a raggiera sulla base di frolla.

Versare la crema proteica sulle pere, distribuire uniformemente.

Cospargere con le noci tritate e le gocce di cioccolato.

Cuocere per 28 minuti a 180°C, fino a quando la superficie è dorata e il ripieno è ben assestato.

Lasciar raffreddare completamente prima di sformare e servire in porzioni.
