In una pentola a pressione (o pentolone con coperchio), rosola in 3 g di olio EVO la cipolla affettata finemente finché non diventa trasparente.

Aggiungi i 70 g di agnello magro (spalla sgrassata) e i 100 g di filetto di pollo in bocconcini: fai colorare bene da tutti i lati per 4-5 minuti, mescolando.

Incorpora il concentrato di pomodoro (15 g), ras-el-hanout (2 g), cumin e paprika; sala e pepate. Aggiungi carota, navone, zucchina (tutti a pezzi uguali), i ceci sciacquati (60 g) e il dado di brodo sgrassato sciolto in 200 ml di acqua.

Chiudi la pentola a pressione e cuoci per 20 minuti a pressione media, oppure copri e cuoci 30-35 minuti a fuoco medio in pentolone.

Mentre cuoce, rosola la salsiccia di pollo piccante (50 g, sgrassata) in padella antiaderente senza olio per 6-7 minuti.

In una ciotola, versa il cuscus (50 g di semola fine) e versa sopra 120 ml di acqua bollente salata: copri e lascia riposare 5 minuti, poi sgrana con la forchetta. Servi il cuscus in piatto fondo, circondato da carni, verdure e brodo leggero della cottura.
