Monta gli albumi a neve ferma con l'eritritolo, quindi aggiungi delicatamente il tuorlo, la farina di avena e la farina di cocco, mescolando con movimenti dal basso verso l'alto.

Dividi l'impasto in due parti e in una di esse incorpora il cacao in polvere. Versa l'impasto chiaro in uno stampo monoporzione rivestito di carta forno e aggiungi l'impasto al cacao sopra.

Distribuisci le ciliegie sgocciolate sull'impasto e inforna a 160°C per circa 15 minuti. Una volta cotto, lascia raffreddare completamente.

Prepara la crema sciogliendo l'amido di mais nel latte di mandorla; riscalda il restante latte e versa il composto, cuocendo per 2 minuti mescolando fino ad addensare. Togli dal fuoco e aggiungi lo yogurt greco, dolcificando a piacere.

Stendi la crema sulla base di pan di spagna raffreddata.

Sciogli il cioccolato fondente a bagnomaria con l'olio di cocco, mescola bene e versa sopra la crema. Crea delle onde con una spatola.

Riponi in frigorifero per almeno 1 ora prima di servire.
