In una casseruola, porta a ebollizione l'acqua con il burro, il sale e l'edulcorante.

Una volta sciolto il burro, togli dal fuoco e aggiungi la farina integrale, mescolando energicamente fino a ottenere un impasto omogeneo.

Lascia intiepidire per circa 10 minuti.

Preriscalda il forno a 200°C e prepara una teglia foderata con carta da forno.

Trasferisci l'impasto in una sac à poche e forma dei bastoncini lunghi circa 3 cm sulla teglia, lasciando spazio tra di essi.

Spegni il forno e lascia gli éclair all'interno socchiuso per 10 minuti per farli asciugare.

Nel frattempo, in una ciotola, unisci la ricotta, lo yogurt greco, il timo, la paprika, il sale e il pepe, mescolando bene fino a ottenere un composto cremoso.
