In un pentolino, scalda 40 ml di acqua con 8 g di yogurt greco 0% e un pizzico di sale. Aggiungi 30 g di farina di cocco e 15 g di farina di avena, mescolando fino ad ottenere un impasto omogeneo. Incorporare un uovo e mescolare bene. Trasferisci il composto in una tasca da pasticceria.

Forma un bastoncino di circa 12 cm su una teglia rivestita di carta forno. Cuoci in forno preriscaldato a 200°C per 18-20 minuti, finché non è dorato e gonfio. Spegni il forno e lascia asciugare per 5 minuti.

Per la crema, in un pentolino mescola 60 ml di latte di mandorla, 1 tuorlo d'uovo, 2 g di amido di mais e i semi di mezzo baccello di vaniglia. Cuoci a bagnomaria a fuoco basso per circa 6 minuti, quindi aggiungi 15 g di cioccolato fondente e mescola fino a scioglierlo completamente. Lascia raffreddare.

Monta 40 g di yogurt greco con 2 g di stevia fino ad ottenere una mousse leggera. Incorporare delicatamente la crema di cioccolato raffreddata.

Farcisci l'éclair con un sac-à-poche e guarnisci con scaglie di cioccolato fondente.
