Method

In una ciotola, mescola la ricotta magra con lo yogurt greco e l'eritritolo fino a ottenere una crema omogenea.

Aggiungi la farina di avena e le proteine in polvere, mescolando bene per amalgamare.

Forma un impasto compatto e avvolgilo in pellicola trasparente, lasciando riposare in frigorifero per almeno 30 minuti.

Stendi l'impasto su un piano infarinato e ritaglia dei cerchi di circa 10 cm di diametro.

Metti un cucchiaio di marmellata al centro di ogni cerchio, bagna i bordi con un po' d'acqua e piega a mezzaluna, sigillando bene i bordi con una forchetta.

Disponi le empanadas su una teglia rivestita di carta forno e cuoci in forno a 180°C per 15 minuti fino a doratura.

Sforna e spolvera con un pizzico di cannella prima di servire.
