Affettare la cipolla rossa e tritarla finemente. Staccare le foglie di rosmarino dai rametti.

Scaldare l'olio extravergine in una pentola grande a fuoco medio-alto. Aggiungere la cipolla e il rosmarino, far rosolare per 3-4 minuti fino a doratura leggera e profumazione.

Aggiungere la salsiccia di tacchino sgranata con un cucchiaio di legno, spezzettarla mentre cuoce per 4-5 minuti fino a rossolatura uniforme e perdita del rosato interno.

Versare il vino rosso, aumentare il fuoco a massimo per 2 minuti per sfumare l'alcol e far evaporare i vapori alcolici.

Aggiungere il farro integrale e mescolare per 1 minuto, distribuendo bene gli ingredienti.

Versare l'acqua calda e sbriciolate il dado di carne dentro. Portare a ebollizione, poi ridurre a fuoco medio-basso.

Cuocere coperto per 30-35 minuti, mescolando ogni 10 minuti e controllando che il liquido rimanga sufficiente. Il farro deve essere tenero ma al dente, il brodo quasi completamente assorbito.

Regolare il sale. Mantecare con un filo d'olio crudo. Servire caldo in piatti fondi, decorare con una macinata di pepe nero fresco.
