Preriscalda il forno a 180°C.

In una ciotola mescola la farina di farro, il cacao, il lievito e un pizzico di sale.

Aggiungi il burro fuso, il tuorlo e impasta con le mani fino a ottenere un composto sabbioso e omogeneo.

Distribuisci la base su una teglia da forno rivestita di carta (dimensioni 20x25 cm circa) e pressala bene con i palmi. Lascia riposare in frigorifero per 10 minuti.

Inforna per 8-10 minuti fino a leggera doratura, quindi estrai e lascia raffreddare un po'.

Nel frattempo, frulla la ricotta magra con il latte scremato e la vaniglia fino a cremosità perfetta.

In una ciotola pulita, monta gli albumi a neve ferma usando le fruste elettriche (circa 3-4 minuti).

Incorpora delicatamente la stevia agli albumi, poi unisci la crema di ricotta con movimenti dal basso verso l'alto.

Versa la crema sulla base raffreddata e livella la superficie.

Inforna a 180°C per 28-32 minuti: la cheesecake deve restare leggermente morbida al centro, non completamente solida.

Spegni il forno e lascia riposare 10 minuti con lo sportello mezzo aperto.

Estrai e lascia raffreddare completamente a temperatura ambiente, poi refrigera per almeno 2 ore prima di servire.
