Method

Sciogliere il lievito in 160 ml di acqua tiepida (35-37°C) insieme a un pizzico di zucchero e attendere 10 minuti fino a che non risulti schiumoso.

In una ciotola mescolare la farina di grano intero, la farina tipo 0, le proteine in polvere e il sale.

Versare il lievito attivato nella miscela di farine e impastare energicamente per 8-10 minuti fino a ottenere un impasto liscio e elastico. Aggiungere l'olio d'oliva durante l'impasto.

Lasciar lievitare l'impasto coperto con un canovaccio umido per 60 minuti in un luogo tiepido, finché non raddoppia di volume.

Preparare uno stampo da plumcake rettangolare (circa 20x11 cm) oliandolo leggermente e cospargendolo di farina.

Trasferire delicatamente l'impasto nello stampo, lisciare la superficie e cospargere con i semi se desiderato.

Lasciar lievitare coperto per altri 35-40 minuti fino a quando l'impasto raggiunge il bordo dello stampo.

Preriscaldare il forno a 190°C.

Cuocere il pane nello stampo per 35 minuti, quindi togliere delicatamente lo stampo (aiutandosi con un coltello intorno ai bordi) e cuocere ancora 5-8 minuti fino a doratura dorata.

Lasciar raffreddare su una gratella prima di tagliare a fette.
