Ammollare l'uvetta nel rum per 15 minuti; scolare e strizzare delicatamente.

In una ciotola pulita, montare gli albumi a neve ferma con una frusta elettrica (circa 4-5 minuti) fino a ottenere picchi ben definiti.

In un'altra ciotola, mescolare i tuorli con miele, estratto di vaniglia, proteine in polvere, farina integrale e latte fino a un composto omogeneo.

Incorporare delicatamente il composto dei tuorli negli albumi montati con una spatola, alternando con l'uvetta, fino a ottenere un impasto soffice e privo di grumi.

Scaldare il burro chiarificato in una padella antiaderente (diametro 24-26 cm) a fuoco medio.

Versare un quarto dell'impasto e cuocere per 5-6 minuti fino a quando la base non risulta dorata e leggermente croccante.

Con una spatola, dividere la frittata in 4 quadranti, capovolgere ogni pezzo e cuocere per altri 3-4 minuti fino a doratura.
