In una pentola, portare a ebollizione il brodo vegetale con il petto di pollo, lo zenzero fresco, l'aglio, il sale e l'eritritolo; cuocere a fuoco lento per circa 15-20 minuti fino a completa cottura del pollo.

In una padella, scaldare l'olio di cocco e aggiungere lo zenzero e l'aglio tritati; soffriggere per un paio di minuti fino a quando non sprigionano un buon profumo.

Aggiungere il riso di cavolfiore e mescolare bene; cuocere per 4-5 minuti, mescolando di tanto in tanto, fino a far assorbire i sapori.

Togliere il pollo dal brodo, disossare se necessario e tagliare a pezzi di circa 2 cm.

Preparare la salsa: frullare il peperoncino, l'aglio sott'aceto, lo zenzero fresco, la salsa di soia e l'aceto di riso fino a ottenere una consistenza omogenea.

Servire il riso di cavolfiore in un piatto, adagiarvi sopra i pezzi di pollo e versare un mestolo di brodo caldo; guarnire con la salsa piccante, il coriandolo fresco e le fettine di cetriolo.
