Preriscalda il forno a 175°C. In una ciotola, mescola il burro di cocco con l'eritritolo fino a ottenere una crema leggera. Aggiungi l'albume e la scorza di limone, mescolando bene.

In un'altra ciotola, unisci la farina di mandorle, la farina di avena, le proteine in polvere, la cannella e un pizzico di sale.

Incorpora gli ingredienti secchi nel composto cremoso, impastando fino a ottenere un impasto omogeneo.

Dividi l'impasto in due parti: una per la base e una per le decorazioni. Stendi la prima parte in uno stampo rettangolare di 10x8 cm.
