Lavare bene le arance sotto acqua corrente, quindi asciugarle con un canovaccio pulito.

Eliminare le estremità (parte bianca e dura) con un coltello affilato.

Tagliare le arance in fettine orizzontali di circa 3 mm, poi tagliare ogni fetta a metà.

In una pentola a fondo pesante, versare le arance tagliate insieme al succo che si forma.

Aggiungere l'eritritolo, il succo di limone e la stecca di cannella intera.

Portare a fuoco medio-alto fino al bollore, mescolando di tanto in tanto.

Ridurre il fuoco a medio e cuocere per 35-40 minuti, mescolando ogni 5-10 minuti, finché la polpa non si disgrega completamente e il composto si riduce di volume.

Nel frattempo, disperdere l'agar-agar in 2 cucchiai di acqua fredda, mescolando bene per evitare grumi.

Quando la marmellata raggiunge la giusta consistenza (testa di pasta), versare l'agar-agar diluito, mescolare velocemente per 2-3 minuti a fuoco vivo per attivare l'addensante.

Togliere la stecca di cannella con una pinza.

Versare la marmellata ancora calda in vasetti di vetro sterilizzati (avendo cura di capovolgerli subito per creare il sottovuoto), chiudere ermeticamente e lasciar raffreddare completamente prima di posizionare in posizione verticale.
