Tritare finemente la cipolla e farla rosolare in una pentola grande con un cucchiaio di olio extravergine a fuoco medio per 3-4 minuti fino a quando non diventa trasparente.

Aggiungere il finocchio tagliato a pezzetti medi, il rosmarino e l'alloro, cuocere per 5 minuti mescolando per insaporire.

Versare il brodo vegetale freddo, aggiungere orzo, farro, piselli spezzati e lenticchie rosse.

Portare a ebollizione, ridurre il fuoco a medio-basso e cuocere coperto per 40-45 minuti, mescolando occasionalmente, fino a quando i cereali e i legumi risultano teneri ma ancora leggermente al dente.
